Cooking Steps
- Preheat the oven to 425°F (220°C).
- Prepare the marinade by blending the rehydrated ancho chilies, smoked paprika, crushed garlic, kosher salt, ground coriander, sherry vinegar or lemon juice, olive oil, black pepper, and yogurt together in a bowl until smooth.
- Rub the marinade generously all over the butterflied chicken.
- Arrange the sliced potatoes in a baking dish and drizzle with olive oil, kosher salt, and cracked pepper.
- Place the marinated chicken on top of the potatoes.
- Roast in the preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with finely chopped cilantro and serve with a drizzle of lemon juice.
