For the Chicken
  • 1 whole Chicken (3-4 lbs) butterflied for even cooking
  • 1.5 tablespoons Kosher Salt enhances flavor

  • 1.5 teaspoons Ground Coriander adds warm, citrusy note

  • 1 cup Plain Yogurt for tenderness
For the Marinade
  • 2 Dried Ancho Chilies rehydrated
  • 0.25 cup Sherry Vinegar or Lemon Juice for brightness
For the Potatoes
  • 1.5 lbs Potatoes (Yukon or Reds) thinly sliced
  • 1 tablespoon Olive Oil drizzled over potatoes
  • 1 pinch Kosher Salt for seasoning
  • Cracked Pepper to taste
For Garnish
  • 1 bunch Cilantro finely chopped
  • 1 tablespoon Lemon Juice freshly squeezed

Method
 

Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. Prepare the marinade by blending the rehydrated ancho chilies, smoked paprika, crushed garlic, kosher salt, ground coriander, sherry vinegar or lemon juice, olive oil, black pepper, and yogurt together in a bowl until smooth.
  3. Rub the marinade generously all over the butterflied chicken.
  4. Arrange the sliced potatoes in a baking dish and drizzle with olive oil, kosher salt, and cracked pepper.
  5. Place the marinated chicken on top of the potatoes.
  6. Roast in the preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Garnish with finely chopped cilantro and serve with a drizzle of lemon juice.

Notes
