How to Make Zesty Grapefruit Yogurt Cake
  1. Preheat your oven to 350°F (175°C). This ensures a perfectly baked cake with a delightful golden crust.
  2. Mix the dry ingredients in a bowl: combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  3. Combine the wet ingredients in another bowl: stir together 1 cup of Greek yogurt, 1 cup of sugar, 3 eggs, 1 tablespoon of grapefruit zest, 1 teaspoon of pure vanilla extract, 1/2 cup of vegetable oil, and 1/2 cup of freshly squeezed grapefruit juice.
  4. Gradually blend the dry ingredients into the wet mixture, mixing until just combined to maintain a light, fluffy texture.
  5. Pour the batter into a greased cake pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 50 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
  7. Cool the cake for about 15 minutes in the pan, then transfer it to a wire rack to cool completely before glazing.
  8. In a small bowl, whisk together 1 cup of powdered sugar with 1 tablespoon of freshly squeezed grapefruit juice until smooth. Drizzle over the cooled cake.
