  • 1/2 cup Flour for dredging
For the Coating
  • 1/4 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder or fresh garlic
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper to taste
For the Sauce
  • 2 tablespoons Olive oil extra virgin recommended
  • 4 tablespoons Unsalted butter adjust to taste
  • 3 cloves Minced garlic
  • 1 cup Chicken stock low-sodium
  • 1/4 cup Lemon juice
  • 1 tablespoon Lemon zest
  • 2 tablespoons Capers
For Garnish
  • 1/4 cup Fresh parsley chopped

How to Make Zesty Chicken Piccata
  1. Prepare the Chicken: Cut the boneless, skinless chicken breasts into six equal pieces.
  2. Dredge in Flour: Coat the chicken pieces in a mixture of flour, garlic powder, salt, and pepper.
  3. Fry Chicken: In a large pan, heat the olive oil over medium-high heat. Cook the chicken pieces until golden brown, about 5-7 minutes per side.
  4. Sauté Garlic: In the same pan, add the unsalted butter and sauté the minced garlic until fragrant, about 1 minute.
  5. Simmer Sauce: Pour in the chicken stock, lemon juice, lemon zest, and toss in the capers. Simmer until it thickens slightly, about 3-5 minutes.
  6. Finish with Butter: Stir in the remaining unsalted butter, return the chicken to the pan and coat it in the sauce.
  7. Garnish & Serve: Sprinkle freshly chopped parsley over the chicken just before serving.
