  • 500 grams dried Cannellini beans soaked overnight
  • 2.5 liters boiling hot water
  • 160 grams onion chopped
  • 1 piece bay leaf
  • 2 pieces carrots chopped
  • 150 grams chopped celery
  • 150 grams extra ripe tomato grated
  • 1 tablespoon tomato paste
  • 160 ml extra virgin olive oil
  • Freshly ground pepper to taste
  • Hot red pepper flakes or 1 small chili pepper optional

Method
 

Cooking Instructions
  1. Soak the dried Cannellini beans overnight in water.
  2. Drain and rinse the beans, then place them in a large pot with boiling hot water.
  3. Add the chopped onion, bay leaf, sliced carrots, chopped celery, grated tomato, and tomato paste to the pot.
  4. Stir in the extra virgin olive oil and season with freshly ground pepper and optional hot red pepper flakes or chili pepper.
  5. Bring the mixture to a boil, then reduce to a simmer.
  6. Cook for 90 minutes, until the beans are tender and the soup has thickened a bit.
  7. Remove the bay leaf before serving.
