Cooking Instructions
- Soak the dried Cannellini beans overnight in water.
- Drain and rinse the beans, then place them in a large pot with boiling hot water.
- Add the chopped onion, bay leaf, sliced carrots, chopped celery, grated tomato, and tomato paste to the pot.
- Stir in the extra virgin olive oil and season with freshly ground pepper and optional hot red pepper flakes or chili pepper.
- Bring the mixture to a boil, then reduce to a simmer.
- Cook for 90 minutes, until the beans are tender and the soup has thickened a bit.
- Remove the bay leaf before serving.
