How to Make Vegan Spinach Artichoke Grilled Cheese
  1. Blend the tofu mixture by combining the extra firm tofu, olive oil, garlic, nutritional yeast, miso paste, lemon juice, and salt in a blender or food processor until smooth.
  2. Fold in the veggies by stirring in fresh spinach and artichoke hearts into the tofu mixture.
  3. Prepare the bread by spreading vegan mayonnaise or butter evenly on one side of each slice of sourdough bread.
  4. Heat the skillet over medium heat, then place one slice of bread, mayonnaise-side down, in the skillet.
  5. Layer on the filling by spreading a generous amount of the tofu mixture on top of the bread slice in the skillet.
  6. Add the top slice by placing another slice of bread on top, with the mayonnaise side facing up.
  7. Cook until golden brown, then carefully flip the sandwich and cook the other side until golden and heated throughout, about 3-4 minutes per side.
  8. Repeat the process for the remaining ingredients to make a second sandwich.
  9. Serve warm by cutting the sandwiches in half and enjoying while still toasty.
