How to Make Vegan Spinach Artichoke Grilled Cheese
- Blend the tofu mixture by combining the extra firm tofu, olive oil, garlic, nutritional yeast, miso paste, lemon juice, and salt in a blender or food processor until smooth.
- Fold in the veggies by stirring in fresh spinach and artichoke hearts into the tofu mixture.
- Prepare the bread by spreading vegan mayonnaise or butter evenly on one side of each slice of sourdough bread.
- Heat the skillet over medium heat, then place one slice of bread, mayonnaise-side down, in the skillet.
- Layer on the filling by spreading a generous amount of the tofu mixture on top of the bread slice in the skillet.
- Add the top slice by placing another slice of bread on top, with the mayonnaise side facing up.
- Cook until golden brown, then carefully flip the sandwich and cook the other side until golden and heated throughout, about 3-4 minutes per side.
