Cake Preparation
- Preheat the oven to 350°F (175°C) and lightly grease your baking pan with safflower oil.
- Mix the ground flaxseeds and water in a small bowl to create your flax egg. Set aside.
- Combine the whole wheat pastry flour, baking powder, baking soda, cinnamon, ground ginger, and ground cloves or allspice in a large bowl.
- Add the dark agave nectar or maple syrup, applesauce, safflower oil, vanilla extract, and prepared flax egg to the dry ingredients. Mix until smooth.
- Fold in the raisins.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 45 minutes or until a toothpick inserted comes out clean.
- Cool the cake before transferring to a wire rack. Garnish with sliced almonds.
