  • 1/2 cup Applesauce for moisture
  • 1/4 cup Safflower oil keeps cake moist

  • 1/2 cup Dark or golden raisins adds chewy sweetness

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease your baking pan with safflower oil.
  2. Mix the ground flaxseeds and water in a small bowl to create your flax egg. Set aside.
  3. Combine the whole wheat pastry flour, baking powder, baking soda, cinnamon, ground ginger, and ground cloves or allspice in a large bowl.
  4. Add the dark agave nectar or maple syrup, applesauce, safflower oil, vanilla extract, and prepared flax egg to the dry ingredients. Mix until smooth.
  5. Fold in the raisins.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 45 minutes or until a toothpick inserted comes out clean.
  8. Cool the cake before transferring to a wire rack. Garnish with sliced almonds.
