- Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper for easy cookie removal and cleanup.
- Cream together the softened salted butter, light brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the vanilla extract and mix well, ensuring it's fully incorporated.
- Whisk together the flour, cornstarch, baking soda, and salt in another bowl.
- Gradually combine the dry ingredients with the wet ingredients, mixing until just incorporated.
- Flatten a portion of the dough, placing a small scoop of Biscoff Cookie Butter in the center.
- Enclose the cookie butter with the dough, rolling it into a ball without gaps.
- Place the cookie dough balls on the baking sheet, spacing them out.
- Bake for 10 minutes, or until golden brown and fragrant.
