Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare your baking dish by lining it with parchment paper.
  2. Mash the very ripe bananas in a large bowl until smooth.
  3. Add the maple syrup, almond butter, non-dairy milk, and vanilla extract to the mashed bananas and mix until well combined.
  4. Combine the old fashioned oats, almond flour, baking powder, cinnamon, salt, chopped nuts, shredded coconut, chia seeds, and dates in another bowl.
  5. Mix the dry ingredients gradually into the wet mixture until just combined.
  6. Pour the mixture into your prepared baking dish and spread it evenly.
  7. Top the mixture with slices of ripe banana and sprinkle with coconut sugar for added flavor.
  8. Bake for 30-45 minutes or until the bars are set and golden on top.
  9. Cool the bars in the dish for a few minutes before slicing them into squares.
