Preparation
- Preheat the oven to 350°F (175°C) and prepare your baking dish by lining it with parchment paper.
- Mash the very ripe bananas in a large bowl until smooth.
- Add the maple syrup, almond butter, non-dairy milk, and vanilla extract to the mashed bananas, mixing until well combined.
- Combine the old fashioned oats, almond flour, baking powder, cinnamon, salt, chopped nuts, shredded coconut, chia seeds, and dates in another bowl.
- Mix the dry ingredients gradually into the wet mixture until just combined.
- Pour the mixture into your prepared baking dish and spread it evenly.
- Top the mixture with slices of ripe banana and sprinkle with coconut sugar and additional cinnamon.
- Bake for 30-45 minutes or until the bars are set and golden on top.
- Cool the bars in the dish for a few minutes before slicing them into squares.
