How to Make Valentine Cookie Cups
  1. Preheat your oven to 350°F (175°C) and line a cupcake or muffin pan with paper liners.
  2. In a large mixing bowl, cream together the softened unsalted butter, creamy peanut butter, brown sugar, and granulated sugar until smooth and fluffy—about 2-3 minutes.
  3. Add in the vanilla extract and large egg, mixing until fully incorporated and creamy.
  4. Stir in the baking soda and all-purpose flour until just combined. The dough should be soft and slightly sticky.
  5. Use a cookie scoop or spoon to portion the dough into the prepared baking pan, pressing gently to form cups.
  6. Bake in the preheated oven for 8 minutes, or until the edges are lightly golden brown.
  7. Press a miniature Reese’s Peanut Butter Cup into the center of each warm cookie cup.
  8. Allow the cookie cups to cool for a few minutes before transferring to a wire rack. Top with jumbo heart sprinkles before serving.
