- Prepare the wings: Begin by removing the tips from the chicken wings. Coat them evenly in a mixture of plain flour, bicarbonate of soda, ground cinnamon, and ground smoked paprika for a flavorful crust.
- Heat the oil: In a shallow frying pan, pour enough sunflower oil to cover the bottom and set it over medium heat. Wait until the oil is hot and shimmering.
- Fry the wings: Carefully place the coated wings into the hot oil. Fry them until they are golden brown and crispy, about 8-10 minutes.
- Mix the sauce: In a large bowl, whisk together the Sriracha, runny honey, and finely grated ginger.
- Toss the wings: Once fried, remove the wings from the oil and let them drain briefly. Toss them in the Sriracha and honey mixture.
- Bake the wings: Preheat your oven to 400°F (200°C). Place the coated wings on a baking tray lined with parchment paper and bake for 15-20 minutes.
