Cooking Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onion, celery, and carrot until softened, about 5-7 minutes.
  3. Stir in grated garlic and cook for another minute.
  4. Add dried basil, oregano, thyme, red pepper flakes, Kosher salt, and black pepper; mix well.
  5. Incorporate tomato paste and vegetable broth; bring to a simmer.
  6. Stir in drained and rinsed white beans; cook for 10 minutes.
  7. Add baby spinach and stir until wilted, about 2 minutes.
  8. Serve hot and enjoy every spoonful.
