- Begin by heating olive oil in a large skillet over medium heat.
- Add the minced shallot and garlic, sautéing until they’re softened and fragrant—around 2-3 minutes.
- Stir in the cherry tomatoes, letting them cook down until they begin to burst, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a gentle simmer for around 2 minutes.
- Gently place the cod into the skillet, covering it with a lid. Cook until the fish is flaky and opaque, roughly 8-10 minutes.
- Right before serving, stir in the chopped basil, lemon slices, butter, and a splash of Calabrian chili oil.
