How to Make
  1. In a medium-sized saucepan, whisk together your dairy-free milk, cornstarch, coconut sugar, cocoa powder, and a pinch of salt.
  2. Place the saucepan over medium heat, stirring constantly until the mixture thickens and begins to bubble, about 5 minutes.
  3. Remove the saucepan from heat and stir in the vanilla extract and peanut butter until creamy and smooth.
  4. If desired, fold in the chopped dairy-free chocolate and stir until melted.
  5. Pour the pudding into serving dishes and allow to cool at room temperature.
  6. Refrigerate for at least 120 minutes to set.
