Ingredients
  

For the Chicken and Mushrooms
  • 1 pound cooked shredded rotisserie chicken feel free to use any leftover chicken you have
  • 8 ounces mushrooms, sliced consider using shiitake for extra punch
  • ¾ cup sweet chili sauce provides a perfect balance of sweetness and heat
  • 1 tablespoon olive oil or avocado oil for sautéing
For the Cucumber Crunch Delight
  • 6 mini Persian cucumbers, thinly sliced substitute with English cucumbers if preferred
  • 1 bunch red radishes, thinly sliced swap with daikon for a milder flavor
  • 1 handful fresh cilantro, chopped substitute with parsley if preferred
  • 2 tablespoons chili oil or chili crunch for an extra kick
  • 2 tablespoons tahini or smooth peanut butter tahini is nut-free
  • 1 lime juice of use lemon if that's what you have
For Serving
  • 2 cups cooked jasmine rice the perfect base for your bowl
  • 3 cups cooked cauliflower rice adds volume and nutrients

Method
 

How to Make Sweet Chili Chicken & Mushroom Bowls
  1. In a medium pan, warm the olive oil or avocado oil over medium heat.
  2. Add the sliced mushrooms to the pan and sauté until they become tender and golden brown, about 5 minutes.
  3. Stir in the cooked shredded chicken and the sweet chili sauce. Cook until everything is heated through, about 3 minutes.
  4. In a separate bowl, combine the thinly sliced cucumbers, radishes, chopped cilantro, chili oil or chili crunch, tahini or peanut butter, and lime juice. Toss well.
  5. Serve the chicken and mushroom mixture over a warm bed of jasmine rice and cauliflower rice. Top with your cucumber mixture.
