Preparation
  1. Preheat your oven to 375°F (190°C). This step ensures our tomatoes bake perfectly, developing a tender texture while the cheese filling gets warm and bubbly.
  2. Combine all the filling ingredients in a mixing bowl: cottage cheese, parmesan, basil, parsley, thyme, rosemary, black pepper, lemon zest, minced garlic, panko breadcrumbs, olive oil, and salt. Stir gently until everything is well blended, creating a creamy and flavorful mixture.
  3. Hollow out the medium tomatoes carefully, creating enough space for the filling. You can use a small spoon or a melon baller. Ensure not to puncture the sides so they hold the cheese mixture well!
  4. Fill each hollowed tomato with the herby cottage cheese mixture. Press down gently with a spoon to pack the filling, ensuring each tomato is generously stuffed with the decadent mix.
  5. Place the stuffed tomatoes in a baking dish. Bake in the preheated oven for about 20 minutes, or until the tomatoes are tender and the tops are golden brown and slightly crispy.
