Ingredients
  

For the Base
  • 2 tablespoons Extra virgin olive oil feel free to use any cooking oil you prefer
  • 1 medium Vidalia onion choose a sweet onion for a milder flavor
  • 1 cup Fennel if unavailable, try using celery
  • 3 cloves Garlic use fresh cloves for best aroma
  • 1 medium Jalapeño adjust amount for spice preference
  • 1 teaspoon Aleppo pepper replace with paprika if needed
  • 1 tablespoon Za'atar a blend of herbs that complements the greens
  • 1 teaspoon Ground cumin substitute with coriander for different flavor
For the Greens
  • 4 cups Swiss chard kale or spinach can be alternatives
  • 1 cup Fresh herbs (dill, cilantro, parsley) mix your favorites for a personal touch
For the Eggs
  • 4 large Large eggs use farm-fresh eggs if available
  • 1 teaspoon Kosher salt adjust to taste
  • 1 teaspoon Freshly ground black pepper
For Toppings
  • 1 cup Feta cheese substitute with goat cheese if desired
  • 2 tablespoons Tahini omit for a lighter dish
  • to taste pinch Flaky sea salt sprinkle as needed

Method
 

Cooking Instructions
  1. Heat the olive oil in a skillet over medium heat for about 1-2 minutes until shimmering.
  2. Sauté the onion until translucent, about 4-5 minutes.
  3. Add the fennel and cook until softened, about another 3-4 minutes.
  4. Stir in the garlic, jalapeño, Aleppo pepper, Za'atar, and ground cumin; sauté for 1-2 minutes.
  5. Incorporate the Swiss chard and stir until wilted, about 2-3 minutes.
  6. Create small wells in the mixture and crack the eggs into each well.
  7. Season the eggs with kosher salt and black pepper to taste.
  8. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  9. Remove from heat and top with feta cheese and freshly chopped herbs.
  10. Drizzle with tahini and sprinkle with flaky sea salt before serving.
