Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Whisk together rice vinegar, tamari or soy sauce, gochujang or Sriracha, sambal, apricot jam or honey, yellow mustard, and crushed garlic in a bowl.
  3. Marinate the salmon fillet in the marinade for at least 15 minutes, turning occasionally.
  4. Cook the rice noodles according to package instructions, around 5-7 minutes.
  5. Slice the English cucumber and red bell pepper into thin strips.
  6. Bake the marinaded salmon in the oven for 12-15 minutes, or until it flakes easily.
  7. Assemble the dish by placing the baked salmon over the rice noodles and top with vegetables.
