Ingredients
  

For the Filling
  • 800 g beef chuck steak a tender cut that becomes deliciously juicy when cooked slowly.
  • 35 g plain flour helps thicken the rich filling.
  • 2 tbs vegetable oil used for browning the beef.
  • 1 onion, finely chopped imparts sweetness and depth to the filling.
  • 1 carrot, finely chopped adds a hint of earthiness and sweetness.
  • 2 tbs tomato paste enhances the umami flavor.
  • 250 ml Guinness adds a deep, rich flavor.
  • 1 slice bread spread with English mustard intensifies the savory notes.
  • 80-100 g Stilton cheese optional, adds creamy texture.
For the Pastry
  • 600 g plain flour the base for the flaky pie crust.
  • 0.5 tsp sea salt elevates the overall flavor.
  • 150 g unsalted butter, chilled cold fat makes for a flaky crust.
  • 150 g cheddar, grated optional addition to the pastry.
  • 150 ml water cold water helps bind the pastry.
  • 1 egg yolk whisked with 1 tbs milk for an egg wash.

Method
 

Instructions
  1. Brown the beef chuck steak in vegetable oil in a large pot over medium heat for 5-7 minutes.
  2. Dust the beef with plain flour, stirring well to coat the meat evenly.
  3. Add the chopped onion and carrot to the pot, cooking until softened, about 5-6 minutes.
  4. Mix in the tomato paste and Guinness, stirring to combine. Simmer for about 1 hour.
  5. Incorporate the slice of bread with English mustard and Stilton cheese, if using. Simmer for 10 minutes.
  6. Make the pastry by combining plain flour, sea salt, and butter in a bowl.
  7. Mix in the grated cheddar, then add ice-cold water until the dough comes together.
  8. Roll out the pastry and line your pie cases.
  9. Fill the pie cases with the steak and ale mixture.
  10. Top with pastry lids, sealing edges, and brush with egg wash.
  11. Bake in a preheated oven at 180°C for 25-30 minutes until golden brown.
