- Brown the beef chuck steak in vegetable oil in a large pot over medium heat for 5-7 minutes.
- Dust the beef with plain flour, stirring well to coat the meat evenly.
- Add the chopped onion and carrot to the pot, cooking until softened, about 5-6 minutes.
- Mix in the tomato paste and Guinness, stirring to combine. Simmer for about 1 hour.
- Incorporate the slice of bread with English mustard and Stilton cheese, if using. Simmer for 10 minutes.
- Make the pastry by combining plain flour, sea salt, and butter in a bowl.
- Mix in the grated cheddar, then add ice-cold water until the dough comes together.
- Roll out the pastry and line your pie cases.
- Fill the pie cases with the steak and ale mixture.
- Top with pastry lids, sealing edges, and brush with egg wash.
- Bake in a preheated oven at 180°C for 25-30 minutes until golden brown.
