Ingredients
  

Filling
  • 10 oz Frozen spinach thawed and drained
  • 1 cup Chopped marinated artichoke hearts
  • 1/2 cup Shredded Parmesan
  • 1/2 cup Shredded Gruyère
  • 1/2 cup Shredded white cheddar
  • 1 clove Garlic grated or finely chopped
  • 8 oz Cream cheese at room temperature
  • 1 teaspoon Lemon zest (optional)
  • 1/4 teaspoon Crushed red pepper flakes
  • Kosher salt to taste
For Assembly
  • 1 large Egg whisked with heavy cream
  • 2 tablespoons Heavy cream for egg wash
  • 1 cup All-purpose flour for dusting
  • 1 package (17-oz.) Puff pastry thawed
  • Everything bagel seasoning to taste

Method
 

Instructions
  1. Preheat your oven as per the instructions on the puff pastry package.
  2. Combine in a large bowl the thawed spinach, artichokes, Parmesan, Gruyère, white cheddar, garlic, cream cheese, lemon zest (if using), crushed red pepper flakes, and kosher salt.
  3. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thickness.
  4. Cut the puff pastry into rectangles and place a spoonful of the filling on one side.
  5. Roll up each pastry tightly, sealing the edges by pinching them together.
  6. Brush the tops with the egg wash for a golden finish.
  7. Sprinkle with everything bagel seasoning or sesame seeds if desired.
  8. Bake according to the pastry package instructions until golden brown.
