Method
 

Preparation Steps
  1. Boil the baby potatoes in a large pot of salted water for about 15-20 minutes, or until fork-tender.
  2. Drain the potatoes and let them cool slightly.
  3. Preheat the oven to 450°F (232°C).
  4. Grease a baking sheet lightly with extra-virgin olive oil.
  5. Smash the potatoes on the baking sheet, using a fork or your hand.
  6. Drizzle with more olive oil and sprinkle with kosher salt and freshly ground black pepper.
  7. Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.
  8. Cool the potatoes slightly after removing them from the oven.
  9. Top each potato with a dollop of crème fraîche, a spoonful of caviar, and a sprinkle of minced chives.
