  • 0.25 cup Scallions finely chopped
  • 2 tbsp Fresh cilantro chopped
  • 2 tbsp Fresh basil chopped
  • 1.5 tbsp Sesame seeds toasted
For the Dressing
  • 3 tbsp Rice vinegar
  • 2 tbsp Sesame oil
  • 1.5 tbsp Low sodium Tamari
  • 1 tbsp Mild white miso
  • 1 tsp Sriracha
  • 1 tsp Coconut sugar
  • 1 tsp Fresh garlic finely minced
  • 1 tsp Fresh ginger grated

Method
 

Preparation
  1. Begin by carefully shaving the rainbow carrots using a mandoline or a sharp knife until they are thin and beautifully ribbon-like.
  2. In a large bowl, gently combine the shaved carrots, scallions, fresh cilantro, fresh basil, and toasted sesame seeds.
  3. In a separate bowl, whisk together the rice vinegar, sesame oil, Tamari, white miso, sriracha, coconut sugar, minced garlic, and grated ginger until smooth.
  4. Pour the dressing over the carrot mixture and toss everything together until the salad is evenly coated.
  5. Serve the salad immediately or chill it in the refrigerator for 15-30 minutes to enhance the flavors.
