Directions
  1. In a bowl, combine the Gochujang paste, rice vinegar, light soy sauce, honey, sweet chili jam, and sesame oil. Stir until well blended.
  2. Place chicken thighs into the marinade, ensuring they are fully coated. Allow to marinate for at least 30 minutes.
  3. Heat a pan over medium heat. Add marinated chicken and cook for about 20 minutes or until fully cooked through and caramelized.
  4. In a bowl, combine the shredded cabbage, diced cucumber, sliced scallions, chopped cilantro, salt, additional rice vinegar, sesame oil, and fish sauce. Toss until well mixed.
  5. Plate the cooked chicken alongside the slaw, garnishing with toasted sesame seeds and a drizzle of garlic aioli.
