For the Chicken & Marinade
  • 1 lb Boneless chicken thighs
  • 2 tbsp Extra virgin olive oil
  • 3 tbsp Red Harissa sauce Adjust based on spice preference
  • 2 tbsp Yellow curry powder
  • 1 tbsp Honey Maple syrup can be used as a substitute
  • 1 tsp Kosher salt Adjust to taste
  • 1 tsp Black pepper Adjust to taste
For the Vegetables
  • 3 medium Sweet potatoes Cut into uniform pieces
  • 1 can Chickpeas Drained and rinsed
  • 2 medium Shallots Chopped
  • 4 cloves Garlic Minced
For the Toppings
  • 2 tbsp Butter Melted
  • 1 medium Lemon Juiced
  • 1 cup Crumbled feta
  • 1/2 cup Green olives Pitted and sliced
  • 1/4 cup Mixed fresh herbs Such as parsley and cilantro
  • 1/4 cup Pepperoncini Sliced
  • 1/4 cup Lemon tahini
  • 2 tbsp Sesame seeds

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken, sweet potatoes, chickpeas, shallots, garlic, olive oil, Harissa sauce, curry powder, honey, salt, and pepper in a sheet pan. Toss everything until well coated.
  3. Arrange the mixture in a single layer on the sheet pan.
  4. Roast in the oven for 30-40 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  5. Drizzle with fresh lemon juice and top with feta, olives, fresh herbs, pepperoncini, tahini, and sesame seeds before serving.
