  • 2 pieces Onions sliced
  • 4 cloves Garlic Cloves sliced
  • 1 piece Ginger thumb-sized, sliced
For the Flavor Base
  • 1 tablespoon Sesame Oil
  • 3 tablespoons White Miso Paste
  • 1 tablespoon Red Miso optional
  • 1 tablespoon Light Soy Sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Rice Vinegar
  • 1200 milliliters Beef Stock
For Serving
  • 600 grams Fresh Egg Noodles cooked
  • 1 tablespoon Toasted Sesame Seeds to garnish
  • 1 cup Spring Onion Greens sliced to garnish

How to Make Savory Miso-Braised Chuck Steak with Sesame Noodles
  1. Heat the sesame oil in a large pot over medium heat, then add the sliced onions, garlic, and ginger. Cook for about 5 minutes until fragrant and soft.
  2. Add the chuck steak pieces to the pot and sear them on all sides until browned, about 8-10 minutes.
  3. Stir in the white miso paste, red miso (if using), light soy sauce, mirin, rice vinegar, and beef stock. Bring to a boil.
  4. Reduce heat to low, cover, and braise the steak for about 150 minutes or until tender.
  5. Remove the steak from the pot and let it rest for a few minutes before slicing.
  6. Serve the sliced steak over cooked egg noodles, garnished with sesame seeds and sliced spring onion greens.
