  • 1 tablespoon Tomato Paste
  • 3/4 cups Canned Black Beans rinsed
  • 3/4 cups Corn Kernels fresh or frozen
  • 1 large Tomato diced
  • 1 whole Jalapeño diced
  • 1 clove Garlic minced
For Seasoning
  • 2 tablespoons Cilantro chopped
  • 1 1/4 teaspoons Cumin
  • 1 1/4 teaspoons Kosher Salt
  • 1/4 cup Water
For Serving
  • Lime Wedges optional
  • More Cilantro for garnish

How to Make Savory Ground Turkey Skillet with Zucchini & Black Beans
  1. Heat a skillet over medium heat and add the ground turkey. Cook until it’s browned, stirring occasionally, for about 5-7 minutes.
  2. Sauté the chopped onion and minced garlic in the skillet with the turkey until the onions turn translucent, about 3-4 minutes.
  3. Stir in the tomato paste and diced jalapeño. Cook for another minute, allowing the flavors to meld.
  4. Add the zucchini, corn, black beans, diced tomato, cumin, kosher salt, and water. Stir to combine.
  5. Cover and let it cook for about 10 minutes until the zucchini is tender and the mixture is bubbling.
  6. Remove from heat and gently stir in the chopped cilantro.
  7. Serve with lime wedges and additional cilantro for garnish.
