How to Make Savory Ground Turkey Skillet with Zucchini & Black Beans
- Heat a skillet over medium heat and add the ground turkey. Cook until it’s browned, stirring occasionally, for about 5-7 minutes.
- Sauté the chopped onion and minced garlic in the skillet with the turkey until the onions turn translucent, about 3-4 minutes.
- Stir in the tomato paste and diced jalapeño. Cook for another minute, allowing the flavors to meld.
- Add the zucchini, corn, black beans, diced tomato, cumin, kosher salt, and water. Stir to combine.
- Cover and let it cook for about 10 minutes until the zucchini is tender and the mixture is bubbling.
- Remove from heat and gently stir in the chopped cilantro.
- Serve with lime wedges and additional cilantro for garnish.
