  • 2 cups fresh mozzarella or low-moisture mozzarella

How to Make Savory Eggplant and Italian Sausage Gratin
  1. Preheat the oven to 375°F.
  2. Slice the eggplant into ½-inch rounds.
  3. Roast the eggplant for 25 minutes after drizzling with olive oil and sprinkling with kosher salt.
  4. Brown the Italian sausage in a skillet over medium heat for about 5-7 minutes.
  5. Sauté the garlic for 1-2 minutes until fragrant and add it to the sausage.
  6. Combine fire-roasted canned tomatoes, Italian seasoning, and salt in the skillet and let it simmer for about 5 minutes.
  7. Layer in a large baking dish with roasted eggplant, sausage mixture, basil, heavy cream, parmesan, and mozzarella, repeating until all are used.
  8. Bake in the oven for 30-35 minutes until bubbly and golden brown.
