How to Make Savory Chicken Stew
  1. In a large pot, heat the olive oil and butter over medium heat. Add the yellow onion and celery, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook until fragrant, around 1 minute.
  3. Add the chicken thighs to the pot, cooking until browned on all sides, about 6-8 minutes.
  4. Sprinkle the flour over the chicken and vegetables, stirring to coat everything evenly.
  5. Gradually add the chicken broth and vegetable broth while stirring constantly to prevent lumps.
  6. Toss in the baby potatoes, sliced carrots, dried parsley, thyme, rosemary, sage, and black pepper. Bring to a boil.
  7. Reduce the heat to a simmer and cook for 30 minutes, or until the chicken and potatoes are tender.
  8. Optionally, sprinkle the fresh parsley over the stew before serving.
