How to Make Savory Chicken Stew
- In a large pot, heat the olive oil and butter over medium heat. Add the yellow onion and celery, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook until fragrant, around 1 minute.
- Add the chicken thighs to the pot, cooking until browned on all sides, about 6-8 minutes.
- Sprinkle the flour over the chicken and vegetables, stirring to coat everything evenly.
- Gradually add the chicken broth and vegetable broth while stirring constantly to prevent lumps.
- Toss in the baby potatoes, sliced carrots, dried parsley, thyme, rosemary, sage, and black pepper. Bring to a boil.
