How to Make
- In a large mixing bowl, add the pork belly, minced garlic, minced shallot, soy sauce, oyster sauce, dark soy sauce, mashed fermented red bean curd, brine, honey, Shaoxing wine, Chinese five-spice powder, white sugar, white pepper, and optional red food coloring. Stir well to ensure the pork is fully coated.
- Cover the bowl with plastic wrap and place it in the refrigerator. Marinate the pork belly for at least 1 hour, or if you have time, overnight.
- While the pork is marinating, preheat your grill or griddle to medium-high heat.
- Remove the marinated pork from the refrigerator. Grill the strips for about 15 minutes, turning occasionally until beautifully golden brown and slightly charred on the edges.
- Once grilled to perfection, plate the savory Char Siu pork belly, and serve alongside steamed rice and fresh cucumber slices.

Notes
Ensure that your pork belly is skin-removed for maximum tenderness. Marinade the pork for at least one hour or preferably overnight for rich flavors.
