  • 1 lb pork belly skin-removed strips
  • 4 cloves garlic finely minced
  • 1 medium shallot minced
  • 1/2 cup soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp Chinese fermented red bean curd mashed
  • 2 tbsp brine from red bean curd
  • 2 tbsp honey
  • 2 tbsp Shaoxing wine
  • 1 tbsp Chinese five-spice powder
  • 2 tbsp white sugar
  • 1 tsp white pepper
  • 1 drop red food coloring liquid optional
For Serving
  • 2 cups steamed rice
  • 1 cup cucumber slices

Method
 

How to Make
  1. In a large mixing bowl, add the pork belly, minced garlic, minced shallot, soy sauce, oyster sauce, dark soy sauce, mashed fermented red bean curd, brine, honey, Shaoxing wine, Chinese five-spice powder, white sugar, white pepper, and optional red food coloring. Stir well to ensure the pork is fully coated.
  2. Cover the bowl with plastic wrap and place it in the refrigerator. Marinate the pork belly for at least 1 hour, or if you have time, overnight.
  3. While the pork is marinating, preheat your grill or griddle to medium-high heat.
  4. Remove the marinated pork from the refrigerator. Grill the strips for about 15 minutes, turning occasionally until beautifully golden brown and slightly charred on the edges.
  5. Once grilled to perfection, plate the savory Char Siu pork belly, and serve alongside steamed rice and fresh cucumber slices.
