How to Make Savory Beef and Bean Chili
- Warm 2 tablespoons of avocado oil in a large pot over medium heat.
- Add the diced onion, green bell pepper, poblano pepper, jalapeño pepper, and minced garlic. Sauté until softened, about 5 minutes.
- Sprinkle in 2 teaspoons of kosher salt and 1 teaspoon of black pepper, then add 1 pound of browned ground beef. Stir until well combined.
- Add 2 tablespoons of tomato paste, 1 tablespoon of hot sauce, 2 tablespoons of chili powder, 1 teaspoon of smoked paprika, 1 teaspoon of ground cumin, and 1 teaspoon of garlic powder. Stir for a few minutes to let spices bloom.
- Pour in 28 ounces of fire-roasted tomatoes and 2 cups of low-sodium beef broth. Include 15 ounces of drained and rinsed red kidney beans, stirring gently. Bring to a gentle simmer.
- Let your chili cook for 30 minutes, stirring occasionally. Taste and adjust seasoning if needed.
