Method
 

Preparation
  1. Prepare the brine by mixing Kosher salt, warm water, apple cider vinegar, and light brown sugar in a large bowl.
  2. Submerge the pork loin roast in the brine and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the pork from the brine, rinse under cold water, and pat dry.
  5. Season the pork loin with paprika, garlic powder, chili powder, onion powder, and pepper.
  6. Combine apricot preserves, Asian sweet chili sauce, balsamic vinegar, reduced sodium soy sauce, hot sauce, and dried herbs in a separate bowl.
  7. Place the seasoned pork in a roasting pan and pour the apricot sauce over it.
  8. Roast the pork for 1.5 to 2 hours, until internal temperature reaches 145°F (63°C).
  9. Allow the pork to rest for 10 minutes before slicing.
