Preparation
- Prepare the brine by mixing Kosher salt, warm water, apple cider vinegar, and light brown sugar in a large bowl.
- Submerge the pork loin roast in the brine and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- Remove the pork from the brine, rinse under cold water, and pat dry.
- Season the pork loin with paprika, garlic powder, chili powder, onion powder, and pepper.
- Combine apricot preserves, Asian sweet chili sauce, balsamic vinegar, reduced sodium soy sauce, hot sauce, and dried herbs in a separate bowl.
- Place the seasoned pork in a roasting pan and pour the apricot sauce over it.
- Roast the pork for 1.5 to 2 hours, until internal temperature reaches 145°F (63°C).
- Allow the pork to rest for 10 minutes before slicing.
