- Preheat the oven to 350°F (175°C) and prepare a baking dish by greasing it lightly.
- Peel and slice the Bartlett pears into thin wedges. In a large bowl, combine the pears with granulated sugar, light brown sugar, flour, cinnamon, nutmeg, cloves, salt, and vanilla extract.
- Pour the pear mixture into the prepared baking dish. Drizzle generously with salted caramel sauce.
- Mix together the flour, baking powder, granulated sugar, cinnamon, and salt in a separate bowl for the biscuit topping.
- Cut in the cold salted butter into the dry ingredients until it resembles coarse crumbs.
- Stir in the buttermilk until just combined.
- Drop spoonfuls of the biscuit mixture evenly over the pear filling.
- Brush the top with heavy cream and sprinkle raw sugar or cinnamon sugar.
- Bake in the preheated oven for about 66 minutes.
- Let cool slightly before serving.
