Method
 

Cooking Instructions
  1. Cook the pasta according to package instructions, usually about 8-10 minutes, until al dente. Don’t forget to salt the water for flavor! Drain and set aside.
  2. Heat the olive oil in a large pan over medium heat. Allow it to warm up—this will be your base for sautéing the vegetables.
  3. Sauté the spring onions, leek, and garlic for about 3-4 minutes until softened.
  4. Add the tenderstem broccoli, frozen spinach, and frozen peas, cooking for 3-5 minutes.
  5. Combine the drained pasta into the pan with the vegetable mixture. Toss everything together gently.
  6. Drizzle with extra virgin olive oil and mix well.
  7. Serve topped with grated Parmesan cheese and a sprinkle of fresh herbs.
