- Cook the pasta according to package instructions, usually about 8-10 minutes, until al dente. Don’t forget to salt the water for flavor! Drain and set aside.
- Heat the olive oil in a large pan over medium heat. Allow it to warm up—this will be your base for sautéing the vegetables.
- Sauté the spring onions, leek, and garlic for about 3-4 minutes until softened.
- Add the tenderstem broccoli, frozen spinach, and frozen peas, cooking for 3-5 minutes.
- Combine the drained pasta into the pan with the vegetable mixture. Toss everything together gently.
- Drizzle with extra virgin olive oil and mix well.
- Serve topped with grated Parmesan cheese and a sprinkle of fresh herbs.
