Base Ingredients
  • 2 cups Rolled oats
  • 1 cup Almond butter
  • 1 cup Medjool dates pitted
  • 1 cup Pumpkin puree
Mix-ins
  • 1/4 cup Hemp hearts or chia seeds
  • 1 tbsp Pumpkin pie spice
  • 1 tsp Ground cinnamon
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
Finish
  • 1/2 cup Dark mini chocolate chips

Method
 

Instructions
  1. In a large bowl, mix together rolled oats, almond butter, Medjool dates, pumpkin puree, hemp hearts or chia seeds, pumpkin pie spice, ground cinnamon, salt, and vanilla extract until everything is well blended and the mixture is sticky.
  2. If it feels too crumbly or dry, add a splash of water or a spoonful of almond butter to help everything stick together nicely.
  3. Gently stir in the dark mini chocolate chips until evenly spread throughout your mixture.
  4. With clean hands, take small portions of the mixture and roll them into approximately 12 equal-sized balls.
  5. Refrigerate the formed balls for at least 30 minutes to firm up.
