How to Make Pistachio Muffins
  1. Preheat the oven to 350°F (175°C) and prepare your muffin tins by greasing them or lining with muffin liners.
  2. Combine the melted butter, kosher salt, vanilla extract, brown sugar, granulated sugar, sour cream, buttermilk, and vegetable oil in a large bowl. Mix until smooth.
  3. Gradually add in the flour, baking powder, and baking soda to the wet ingredients. Stir gently until just combined.
  4. Fold in the toasted and chopped pistachios carefully.
  5. Pour the batter into the prepared muffin tins, filling each cup about two-thirds full.
  6. Prepare the crumble topping by mixing together the flour, the remaining chopped pistachios, kosher salt, granulated sugar, and melted unsalted butter.
  7. Sprinkle the crumble topping generously over the muffin batter in each tin.
  8. Bake in the preheated oven for about 12 minutes, or until the muffins are golden brown.
