  • 8 ounces Brie cheese
  • 1 cup unsalted roasted pistachios
  • 1/4 cup honey
  • 1 tablespoon fresh rosemary
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 package puff pastry
  • 1 unit egg beaten
  • fresh cranberries or pomegranate seeds optional

Method
 

How to Make Pistachio-Crusted Brie Bites
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry sheets on a clean surface, then cut them into approximate 3-inch squares.
  3. Place a small piece of Brie cheese (about 1 ounce) in the center of each pastry square.
  4. Mix together the pistachios, honey, rosemary, sea salt, and black pepper in a bowl.
  5. Spoon the pistachio mixture generously over the Brie in each pastry square.
  6. Fold the corners of the pastry over the Brie, pinching to seal.
  7. Brush the tops of the bites with the beaten egg.
  8. Bake for 20 minutes or until they turn golden brown.
  9. Remove from the oven and let cool slightly.
  10. Top each bite with fresh cranberries or pomegranate seeds before serving.
