  • 1 pound boneless, skinless chicken breast cubed

For the Sauce
  • 1 can canned coconut milk
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 pieces dried bay leaves
  • 1/2 teaspoon cinnamon
  • 1 teaspoon garlic flakes
For the Seasoning
  • 1 piece anise star
  • 1 teaspoon dried Sichuan pepper
  • 2 tablespoons sesame seeds for garnish
  • 2 tablespoons spring onions chopped

Method
 

Cooking Instructions
  1. Heat peanut oil in a pan over medium heat until shimmering.
  2. Add cubed chicken breast and cook for 5-7 minutes until browned and cooked through.
  3. Stir in salt, coconut milk, peanut butter, soy sauce, rice vinegar, bay leaves, cinnamon, and garlic flakes, mixing thoroughly.
  4. Cook the mixture for about 4-6 minutes until the sauce is well combined and heated through.
  5. Season with anise star, Sichuan pepper, sesame seeds, and spring onions to taste before serving.
