How to Make Peanut Brittle
- Grease the baking sheet with 2 teaspoons of butter and set it aside.
- Combine sugar, corn syrup, and 1 cup of water in a large saucepan. Stir gently until the sugar is completely dissolved.
- Boil the mixture over medium heat and reduce the heat to medium-low when it reaches a vigorous boil. Cook without stirring.
- Stir in the remaining butter, salt, peanuts, and baking soda. Mix carefully.
- Remove the saucepan from heat and quickly stir in the vanilla extract.
- Pour the peanut mixture onto the prepared baking sheet and spread it evenly.
- Cool the brittle completely at room temperature, then break it into pieces.
