How to Make Peanut Brittle
  1. Grease the baking sheet with 2 teaspoons of butter and set it aside.
  2. Combine sugar, corn syrup, and 1 cup of water in a large saucepan. Stir gently until the sugar is completely dissolved.
  3. Boil the mixture over medium heat and reduce the heat to medium-low when it reaches a vigorous boil. Cook without stirring.
  4. Stir in the remaining butter, salt, peanuts, and baking soda. Mix carefully.
  5. Remove the saucepan from heat and quickly stir in the vanilla extract.
  6. Pour the peanut mixture onto the prepared baking sheet and spread it evenly.
  7. Cool the brittle completely at room temperature, then break it into pieces.
