How to Make Nobu’s Miso-marinated Black Cod
  1. In a bowl, combine the sake, mirin, white miso paste, and sugar. Whisk until smooth, creating a delicious marinade that will soak into your black cod fillets.
  2. Place your black cod fillets in a dish, and pour the marinade over them. Ensure each fillet is generously coated.
  3. Cover the dish and refrigerate the marinated cod for at least 12 hours, or ideally overnight.
  4. When ready to cook, preheat your grill or skillet over medium-high heat.
  5. Take the fillets out of the marinade and let any excess drip off.
  6. Grill or pan-fry the fillets for about 6 minutes, flipping once, until they are cooked through and slightly charred.
