How to Make Nobu’s Miso-marinated Black Cod
- In a bowl, combine the sake, mirin, white miso paste, and sugar. Whisk until smooth, creating a delicious marinade that will soak into your black cod fillets.
- Place your black cod fillets in a dish, and pour the marinade over them. Ensure each fillet is generously coated.
- Cover the dish and refrigerate the marinated cod for at least 12 hours, or ideally overnight.
- When ready to cook, preheat your grill or skillet over medium-high heat.
- Take the fillets out of the marinade and let any excess drip off.
- Grill or pan-fry the fillets for about 6 minutes, flipping once, until they are cooked through and slightly charred.
