  • 2 cloves Garlic minced
  • 2 cups Spinach fresh
  • 1 cup Cheese meltable preference
  • 1 teaspoon Thyme fresh or dried
For the Chicken
  • 4 pieces Chicken Breasts boneless, skinless
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For Cooking
  • 2 tablespoons Butter
  • 2 tablespoons Oil for searing

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the mushrooms and garlic in butter until softened, about 5-7 minutes.
  3. Stir in the spinach and thyme, cooking until the spinach is wilted, about 2-3 minutes.
  4. Remove from heat and mix in the cheese until melted slightly.
  5. Slice pockets into the chicken breasts and stuff with the mushroom mixture.
  6. Season the stuffed chicken with salt and pepper.
  7. Heat oil in a skillet and sear the chicken until browned on both sides, about 4-5 minutes per side.
  8. Transfer to the oven and bake for 20-25 minutes until cooked through.
