Making the Pretzels
- In a large mixing bowl, blend warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.
- Gradually incorporate all-purpose flour, salt, chopped rosemary, and grated Parmesan cheese into the yeast mixture. Mix until a dough starts to form.
- Knead the dough for about 5-7 minutes until it's smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- In a pot, bring 4 cups of water to a boil and add baking soda.
- Divide the dough into 8 equal pieces. Roll each piece into a rope and twist it into a pretzel shape.
- Carefully boil each pretzel in the baking soda water for 30 seconds. Then, remove them and transfer to the prepared baking sheet.
- Sprinkle the boiled pretzels with grated Parmesan cheese and place additional rosemary leaves on top.
- Bake for 15-20 minutes until the pretzels are golden brown.
