Ingredients
  

Dough
  • 4 cups All-purpose flour
  • 1 packet Active dry yeast
  • 1.5 cups Warm water
  • 1 tablespoon Sugar
  • 2 teaspoons Salt
Filling
  • 8 ounces Fresh mozzarella
  • 2 tablespoons Chopped fresh rosemary
  • 1/2 cup Grated Parmesan cheese
Baking Solution
  • 4 cups Water
  • 1/2 cup Baking soda
Topping and Garnish
  • 1/2 cup Grated Parmesan cheese for topping
  • 2 tablespoons Fresh rosemary leaves for garnish

Method
 

Making the Pretzels
  1. In a large mixing bowl, blend warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.
  2. Gradually incorporate all-purpose flour, salt, chopped rosemary, and grated Parmesan cheese into the yeast mixture. Mix until a dough starts to form.
  3. Knead the dough for about 5-7 minutes until it's smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
  4. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  5. In a pot, bring 4 cups of water to a boil and add baking soda.
  6. Divide the dough into 8 equal pieces. Roll each piece into a rope and twist it into a pretzel shape.
  7. Carefully boil each pretzel in the baking soda water for 30 seconds. Then, remove them and transfer to the prepared baking sheet.
  8. Sprinkle the boiled pretzels with grated Parmesan cheese and place additional rosemary leaves on top.
  9. Bake for 15-20 minutes until the pretzels are golden brown.
