How to Make Mini Sweet Potato Pies
  1. Preheat your oven according to the pie crust instructions.
  2. Boil or steam the sweet potatoes until tender, about 20-25 minutes. Peel and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, melted butter, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, clove, and salt. Whisk until smooth and creamy.
  4. Pour the sweet potato mixture into the prepared pie crusts, filling them about three-quarters full.
