How to Make Mini Falafel Bites with Tzatziki and Pickled Onions
  1. In a mixing bowl, combine the chickpeas, cilantro, parsley, yellow onion, garlic, egg, flour, baking powder, cumin, salt, and pepper. Mix until everything is well combined and the flavors meld together beautifully.
  2. Form the mixture into small balls or patties, keeping them roughly uniform in size for even cooking. Aim for about 1 inch in diameter for bite-sized goodness.
  3. In a separate bowl, combine the thinly sliced red onion with sugar, salt, hot water, and vinegar. Allow this mixture to sit for at least 10 minutes to develop a delightful tang.
  4. Heat oil in a frying pan over medium heat. Fry the falafel bites in batches, cooking for approximately 3-4 minutes on each side or until they are golden brown and crispy.
  5. Place the warm falafel bites into mini pita bread and top with the pickled red onions and a sprinkle of fresh mint leaves for a refreshing finish.
