Ingredients
  

Simple Syrup
  • 1 cup water
  • 1 cup white sugar
  • 3 sprigs fresh rosemary for infusion
Cocktail
  • 4 oz tequila (preferably reposado)
  • 1 cup coconut milk (from a can)
  • 1/2 cup fresh lime juice
  • 1/2 cup orange liqueur (preferably Cointreau or Grand Marnier)
  • 1/4 cup rosemary simple syrup
  • 2 cups ice for shaking
Garnish
  • 2 sprigs candied rosemary for garnish
  • 1 tbsp coarse sea salt optional, for rimming the glass

Method
 

Preparation
  1. Combine water and sugar in a saucepan over medium heat. Stir until the sugar dissolves completely. Add fresh rosemary and let it steep for 30 minutes. Strain the syrup and allow to cool.
  2. Mix tequila, coconut milk, fresh lime juice, orange liqueur, and cooled rosemary simple syrup in a cocktail shaker. Add ice and shake vigorously for about 15 seconds until well chilled.
  3. Rim your glass with coarse sea salt, if desired. Moisten the rim with lime juice and dip into the salt.
  4. Serve the margarita by pouring the mixture into your prepared glass. Garnish with a sprig of candied rosemary.
