- Preheat the oven to 350°F (175°C).
- Cream the butter and sugar together in a large bowl until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and salt into the bowl. Mix well until everything is well combined.
- Whisk together the baking powder and flour in a separate bowl.
- Combine the dry mixture into the wet ingredients gradually, stirring until just combined.
- Divide the dough into two equal portions and mix gel food coloring into one portion.
- Scoop small amounts of both doughs and place them together on the baking sheet, swirling gently.
- Bake the cookies for 12-14 minutes, or until the edges are lightly golden.
- Cool the cookies on a wire rack before drizzling melted chocolate on top and adding sprinkles.
