Making the Cookies
- Preheat the oven to 350°F (175°C).
- Cream the butter and icing sugar in a large bowl until light and fluffy.
- Mix in the Earl Grey extract.
- Gradually add the flour and fine sea salt, mixing until fully combined.
- Fold in the Earl Grey leaves gently.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper.
- Flatten the balls slightly using a fork or the palm of your hand.
- Bake for about 10 minutes or until the edges are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
