Ingredients
  

For the Tart Shell
  • 2 cups plain flour
  • 1 cup cold unsalted butter chilled for best results
  • 1/4 cup caster sugar for sweetness
  • 1 tbsp white wine vinegar tenderizes the dough
  • 5 tbsp ice water keeps the dough cold
For the Filling
  • 1/2 cup lime juice freshly squeezed
  • 1/2 cup caster sugar balances tartness
  • 1/2 cup mint leaves fresh
  • 1/4 cup dark rum
  • 1/4 cup flat-leaf parsley leaves fresh
  • 3 large eggs for binding
  • 2 large egg yolks for creaminess
  • 2 tbsp cornflour to thicken
For the Topping
  • 2 tbsp cold unsalted butter for finishing
  • 2 tbsp demerara sugar for crunch
  • 1/4 cup small mint leaves for garnish

Method
 

Prep
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix plain flour, cold unsalted butter, caster sugar, white wine vinegar, and ice water until crumbly, then form into dough.
  3. Roll out dough, place it in the tart pan, trim edges, and chill for 30 minutes.
Make Filling
  1. In another bowl, whisk lime juice, caster sugar, mint leaves, dark rum, parsley, eggs, egg yolks, and cornflour until smooth.
  2. Pour filling into chilled crust.
  3. Bake for about 24 minutes until the center is set but jiggles slightly.
Finish
  1. Cool tarts for at least 15 minutes before serving.
  2. Add cold butter and sprinkle with demerara sugar.
  3. Garnish with small mint leaves.
