Prep
- Preheat oven to 350°F (175°C).
- In a bowl, mix plain flour, cold unsalted butter, caster sugar, white wine vinegar, and ice water until crumbly, then form into dough.
- Roll out dough, place it in the tart pan, trim edges, and chill for 30 minutes.
Make Filling
- In another bowl, whisk lime juice, caster sugar, mint leaves, dark rum, parsley, eggs, egg yolks, and cornflour until smooth.
- Pour filling into chilled crust.
- Bake for about 24 minutes until the center is set but jiggles slightly.
Finish
- Cool tarts for at least 15 minutes before serving.
- Add cold butter and sprinkle with demerara sugar.
- Garnish with small mint leaves.
