For the Chicken
  • 1.5 lb chicken breast boneless
  • 1 Tbsp olive oil for browning
  • 1 clove garlic fresh
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt to taste
  • 1/4 tsp ground black pepper
For the Coating
  • 2 large eggs whisked
  • 3 Tbsp all-purpose flour
  • 1 cup Parmesan cheese grated
For the Sauce
  • 8 Tbsp unsalted butter
  • 2 cloves garlic minced
  • 1/4 cup lemon juice fresh
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season the chicken breast with salt, Italian seasoning, and black pepper.
  3. Whisk together the eggs and minced garlic in a medium bowl until fully combined.
  4. Dredge the chicken in flour, shaking off any excess, then dip into the egg mixture, and coat generously with grated Parmesan cheese.
  5. Heat olive oil and butter in a skillet over medium heat until melted and bubbly.
  6. Cook the coated chicken for about 3-4 minutes on each side until golden brown.
  7. Combine lemon juice, chicken broth, minced garlic, and black pepper in a separate pan over medium heat.
  8. Pour the sauce over the chicken in the skillet, cover and simmer for about 10 minutes.
  9. Serve the Lemon Chicken hot, garnished with fresh lemon zest and additional Parmesan if desired.
