Ingredients
  

For the Slaw
  • 4 cups shredded red cabbage
  • 2 medium carrots grated
  • 1 medium red onion thinly sliced
  • 2 large oranges segmented
  • 1/2 cup slivered almonds
  • 1/4 cup flat leaf parsley chopped
  • 1/4 cup mint leaves
  • 1 cup pomegranate arils
For the Dressing
  • 1/4 cup pomegranate molasses
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic crushed
  • 1 small red chili sliced
  • 1/2 teaspoon sea salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Preparation
  1. In a large bowl, mix together the shredded red cabbage, grated carrots, and thinly sliced red onion.
  2. Gently fold in the segmented oranges, slivered almonds, chopped parsley, mint leaves, and pomegranate arils.
  3. In a small bowl, whisk together the pomegranate molasses, extra-virgin olive oil, balsamic vinegar, minced garlic, and sliced red chili.
  4. Pour the dressing over the slaw mixture and toss to combine thoroughly.
  5. Sprinkle in sea salt and black pepper as desired, and adjust the seasoning to your preference.
  6. Top with additional fresh mint leaves for garnish and serve immediately.
