  • 2 cups chopped peaches fresh peaches
  • 1 cup dark brown sugar
  • 1 tsp cinnamon
  • 1/2 cup salted butter melted
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1 cup plain Greek yogurt
  • 2 whole eggs
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
For the Topping
  • 1 cup additional peaches sliced
  • reserved batter for swirling

Method
 

Directions
  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
  2. Combine chopped peaches with dark brown sugar and cinnamon in a mixing bowl.
  3. Mix melted butter, vanilla extract, brown sugar, Greek yogurt, and whole eggs in a separate bowl until smooth.
  4. Whisk together the flour, baking powder, and salt in another mixing bowl.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Fold in the peach mixture, reserving a handful of peaches for the topping.
  7. Scoop the batter into the prepared muffin tin, filling each cavity about three-quarters full.
  8. Bake in the preheated oven for about 30 minutes or until golden brown and a toothpick inserted comes out clean.
