- Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
- Combine chopped peaches with dark brown sugar and cinnamon in a mixing bowl.
- Mix melted butter, vanilla extract, brown sugar, Greek yogurt, and whole eggs in a separate bowl until smooth.
- Whisk together the flour, baking powder, and salt in another mixing bowl.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Fold in the peach mixture, reserving a handful of peaches for the topping.
- Scoop the batter into the prepared muffin tin, filling each cavity about three-quarters full.
